Sluttishly Easy: Carrot Cake

People get put off by baking cakes. Because that's actual real baking isn't it? Not that fake kind of baking that we bang on about. This is the simplest carrot cake recipe, I promise. So simple, that you'll be done and dusted and eating a slice within the hour. Even the kitchen will be clean.

Things you will need for the cake:
  • 125 grams self raising flour
  • 100ml sunflower oil
  • Pinch of salt
  • 1 tsp ground cinnamon
  • 125 grams soft brown sugar
  • 2 eggs
  • 125 grams grated carrot
  • 25 grams desiccated coconut
  • 25 g chopped walnuts
And stuff for the tasty frosting goodness:
  • 50 grams butter
  • 50 grams mascarpone
  • 225 grams icing sugar
  • 1 tsp lemon juice
And here's what you need to do:
  • Grease a baking tin and preheat the oven to 180 degress/ gas mark 4.
  • Mix the flour, cinnamon, salt and sugar together. Then add the eggs and oil and mix everything up. Throw in the other stuff too - carrots, coconut and walnuts.
  • There. You've made a cake! Pop it in the oven for 20-25 minutes.
  • Mix together the icing sugar, cream cheese and lemon juice until it's light and creamy.
  • Take the cake out of the oven and leave it to cool (otherwise your frosting will melt!)
  • Spread the cake with the frosting, decorate with walnuts and then show off to everyone about how hard you've worked.
  • Eat it all!
