Baking for beginners: Oat and raisin cookies

If you're not a baker, it can be quite costly to buy everything. I've always got flour and eggs in the cupboard for spontaneous cake making, but sometimes, it's not that easy. And all of those ingredients can add up if you're not careful. But these oat and raisin cookies are cheap, cheerful, and they'll leave you with heaps of ingredients left so you can make them whenever you get the urge.

You'll need these things:
  • 50g butter
  • 125g caster sugar
  • 1 egg
  • 50g plain flour
  • 1/2tsp salt
  • 1/2tsp baking powder
  • 175g porridge oats
  • 125g raisins
You'll need to do these things:
  • Lightly grease two baking trays and preheat the over to 180 degrees C or gas mark 4.
  • Cream together the butter and sugar until it's all fluffy.
  • Add the egg and beat together.
  • Sieve the flour, salt and baking powder, and mix into the fluffy mixture.
  • Add the oats and raisins and mix everything together really well.
  • Spoon the mixture onto the trays, flattening slightly with a spoon. You can make them as big, or as small as you want, but a tablespoon size works well.
  • Bake for about 15 minutes (depending on the size).
  • Eat while they're still warm. Yum! Bake some more!

  3. These are so easy to make, I managed to make them *before work*, thus providing my visiting friend and my boyfriend with just-baked cookies for breakfast - and, given their oats content, we felt that this was to be recommended.

I have been walking round in a domestic goddess fug all day.
