You'll need these things:
- 50g butter
- 125g caster sugar
- 1 egg
- 50g plain flour
- 1/2tsp salt
- 1/2tsp baking powder
- 175g porridge oats
- 125g raisins
- Lightly grease two baking trays and preheat the over to 180 degrees C or gas mark 4.
- Cream together the butter and sugar until it's all fluffy.
- Add the egg and beat together.
- Sieve the flour, salt and baking powder, and mix into the fluffy mixture.
- Add the oats and raisins and mix everything together really well.
- Spoon the mixture onto the trays, flattening slightly with a spoon. You can make them as big, or as small as you want, but a tablespoon size works well.
- Bake for about 15 minutes (depending on the size).
- Eat while they're still warm. Yum! Bake some more!

ReplyDeleteThese are so easy to make, I managed to make them *before work*, thus providing my visiting friend and my boyfriend with just-baked cookies for breakfast - and, given their oats content, we felt that this was to be recommended.

I just made these due to my cookie craving and giving up chocolate for lent! added a couple of tbsp of golden syrup as well to make them that little bit more gooey ;)
