Would we ever say no to cheese around here? Probably not. The lovely folks at Leerdammer invited us over to try out some of their new recipes. This chicken bake is so easy: five minutes of chopping, then stick it in the oven for half an hour or so. Voila - a delicious, fast and simple supper.
Serves 4
You'll need:
- 1 jar good quality tomato sauce
- 1 courgette, sliced
- 4 skinless chicken breasts
- 1 red pepper, deseeded and sliced
- 1 tbsp olive oil
- 200g cherry tomatoes
- 100g Leerdammer Mature, grated
Make it!
- Preheat the oven to 180c/160c fan oven/gas mark 4
- Pour the pasta sauce into a large oven-proof dish, add the chicken and coat with a little sauce
- Add the chopped courgettes and peppers, drizzle with olive oil, bake for 25 minutes
- Add the cherry tomatoes and scatter the cheese on the chicken breasts
- Cook for 6-8 more minutes
