You'll need:
- 1 tbsp vegetable oil
- 1 red onion, finely chopped
- 1 red pepper, cut into chunks
- 300g Quorn mince
- 2 garlic cloves, crushed
- 1 glass of red wine
- 200ml vegetable stock
- 1 tsp chilli powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp cinnamon
- 1 tbsp vegetarian Worcester sauce
- 2 red chillis, finely chopped
- 1 tin of kidney beans
- 1 tin of chopped tomatoes
- 1 tsp of tomato pureƩ
- Heat the oil in your biggest saucepan over a medium heat. Add the onion and red pepper and cook gently until softened.
- Add the Quorn and garlic. When it's browned, add half the vegetable stock. Sprinkle on the chilli powder, cumin, coriander and cinnamon and give it a good stir.
- Pour in the red wine and remaining stock. Boil until the liquid is almost gone. It takes a while but this dish deserves patience.
- Add the Worcester sauce, chopped chillis and kidney beans and gently bring to the boil.
- Add the chopped tomatoes and pureƩ.

I always add a generous teaspoon of Marmite and two squares of dark chocolate to mine. Like the idea of the additional spices though, will try that.
ReplyDeleteI always mean to try adding dark chocolate and then it just seems too odd, and I worry it'll ruin my dinner. But I shall give it a go next time!
ReplyDeleteDark chocolate is fab in chilli. It doesn't taste chocolatey at all - it just seems to give all the flavours a real boost. Plain cocoa powder works too. I made a fabulous bean chilli at the weekend - I love chilli, it's perfect Autumn comfort food!

Thanks sooo much for sharing this.. I have hunted high and low for a decent veggie chilli recipe and so far all those ive tried (about 5 different ones) have been so bland with no depth at all. I can't wait to try this out tonight. It sounds DIVINE :d
