Cocktail Hour: Clover Club

Whilst out with the drunken lush behind Yet Another Gin, I go super jealous as he ordered himself a Clover Club. My evil raspberry allergy meant that I wasn't allowed to try any, but it was easily the prettiest drink of the night and I was a bit miffed. Bright pink, with a thick foamy head from the egg whites, it's the perfect drink for gin lovers. I could swap the raspberry for a pomegranate grenadine, but here's the original recipe for the purists amongst you.

You'll need:
  • 50ml gin
  • 1 fresh egg white
  • Juice of half a lemon
  • Three dashes of raspberry syrup
Shake it!

Shake well over cracked ice. A little more than you usually would, to ensure the egg white foams, but not so much that your drink goes watery. Strain into a martini glass. No need for a garnish, it's perfect as it is.
