Sluttishly Savoury: Swahili Spiced Cashew Chicken

Still pining for my holidays, and inspired by the cashew nut trees that grew outside the house I stayed in in Kenya, I came up with this simple and tasty dish. Swahili food has a lot of Indian influence, with plenty of delicious spices involved. Mix them together and rub right into the chicken flesh, and leave it for as long as possible to develop the flavour. If you can get hold of goat meat, that would probably make it even more authentic!

This dish is great with a pile of steamed rice and some coconut chilli greens.

Swahili Spiced Cashew Chicken (serves 4)

You'll need:
  • 4 chicken thighs
  • 1tbsp olive oil
  • 1tsp ground turmeric
  • 1tbsp cumin seeds
  • 1tbsp coriander seeds
  • A handful of cashew nuts, chopped
Make it!
  • Crush the cumin and coriander seeds in a pestle and mortar (or in a saucepan with the end of a rolling pin). Mix with the turmeric and oil to make the spice paste.
  • Coat the chicken with the spice paste and leave in the fridge to marinate for an hour or so.
  • Preheat the oven to 180c / gas 4. Put the chicken on a baking tray and roast for 35 minutes, or until they cooked through.
  • Serve topped with the cashews.

  1. Made this last night and it was delish! Should have worn gloves or a plastic bags over my hands though. I forgot how much tumeric stains and now all my cuticles are yellow... :P

    Yes, I felt like King Midas after I'd made it too...... yellow worktop, yellow dishcloth, yellow mixing bowl, yellow hands - but it was very nice!!
