Sluttishly Easy: Lazy Girl's Peanutty Prawns

This is one of those meals I make when I've come home late from work and I'm in no mood to sweat over a hot stove. I want dinner, and I want it now. Peanutty instant gratification!

If you're in a rush you'll find this sauce approximates the savoury goodness of satay sauce while being an absolute breeze to prepare. You can rustle it up in no time from a mere four store cupboard ingredients. Bung in some prawns and vegetables, maybe some noodles too, and you've got a meal. No sweat!

Lazy Girl's Peanutty Prawns (serves 2)

You'll need:

  • 200g raw shelled prawns
  • A bunch of vegetables, if you're a really lazy girl then just buy any ready-prepared bag of stir fry veggies
  • 2tbsp smooth peanut butter
  • 1tbsp sweet chilli sauce or chilli jam
  • 2tsp soy sauce
  • 1tsp sesame oil
Make it!
  • Stir together the peanut butter, chilli sauce, soy and sesame oil.
  • Heat some vegetable oil in a wok or frying pan. Fry the prawns for a couple of minutes until they are pink and barely cooked.
  • Add the vegetables into the pan and continue to stir fry until they are lightly cooked.
  • Stir through the peanut sauce to warm through.
