Sluttishly Savoury: Prawn & Avocado Sesame Salad

Avocados are a truly unique fruit. They are so tactile - get them when they're ripe and their knobbly skins peel off effortlessly to reveal luscious, buttery flesh. And that satisfying suck when you pop out the stone is hard to beat.


This recipe pairs up avocado with sweet prawns and peppery watercress to make a salad that fills you up without being too heavy. Slice the avocado just before you serve though, or it might turn a grungey shade of grey. If you need to prep it ahead, toss the slices in some lemon juice to keep them looking good and green.

I discovered today that the word avocado comes from the Mexican ahuacatl, which means testicle. Apparently it's down to the shape, and the fact that they hang in pairs on the tree. Don't let that put you off though!

Prawn & Avocado Sesame Salad (serves 2)


You'll need:
  • 1 small bag watercress
  • 1 avocado
  • 140g prawns
  • 1tsp Dijon mustard
  • 2tsp extra virgin olive oil
  • 1tsp sesame oil
  • 2tsp sherry vinegar
  • A sprinkle of sesame seeds
Make it!
  • Make the dressing by whisking together the mustard, oils and vinegar with some salt and pepper.
  • Slice and peel the avocado.
  • Toss the watercress in the dressing and serve with the prawns and avocado slices arranged on top and the sesame seeds sprinkled over. Try not to think of testicles.
