Sluttishly Easy: Potato Hash

Potato hash is one of my favourite standby suppers. It is just perfect after a long hard day when I fancy something quick, simple and comforting. It also comes in pretty handy when a trip to the supermarket is somewhat overdue and the cupboards are looking slightly bare. As long as you have a couple of potatoes handy, you are pretty much good to go.

Eat it as a meal in its own right, I tend to throw a nice runny fried egg on top to finish it off, or try it as a perfect potato accompaniment to any meal.

Feel free to play around with quantities and ingredients. If you have some red or yellow pepper handy then throw some of that in. If you are feeling extra spicy then throw in some extra chilli.

Potato Hash (serves one as a main meal or two as a side dish)

You will need:

3 or 4 medium sized potatoes, diced 1cm cubes
1 small red onion, chopped
2 cloves of garlic, crushed
Handful of mushrooms, diced
Paprika, to taste
Red chilli pepper, chopped
Oil

Make it!

1. Heat the oil in a frying pan and cook the onion and garlic until soft.

2. Toss the diced potatoes with some paprika and add to the pan with the onion and garlic, frying over a medium heat for about five minutes.

3. Add the diced mushrooms and continue to cook until the potatoes are soft.

4. Once the potatoes are cooked, season to taste and add in the chopped chilli pepper and cook for a further minute or two.

5. Serve with a nice runny fried egg, or whatever else takes your fancy, and enjoy. It's been a long hard day and you deserve it!
