This marinade is easy, and it tastes fantastic - the flavours cut right through the breasts and you're left with a succulent and tasty dinner. Even if your supermarket does rubbish chicken.
You'll need:
- 2 chicken breasts (skins on or off, it's entirely up to you)
- 2cm chunk of root ginger, minced
- 2 cloves or garlic, minced
- 1 red chilli, chopped
- olive oil
- splash white wine
- salt
- Throw your minced and chopped ingredients into a sandwich bag with the chicken and oil. Shake and smoosh about a bit (smoosh is an excellent word when it comes to marinading, trust me).
- Tie up and pop in the fridge for a few hours.
- When you're ready to eat, preheat your oven to 180.
- Empty the contents of your bag onto a roasting dish. Pour a splash of white wine over your chicken and make sure the spices are surrounding the breasts. Add salt if you've left the skins on so they'll crisp up.
- Pop in the oven for 30-35 minutes, fill your house with yummy smells and serve with green salad. Vow to never eat plain boring chicken again.
Really into marinades as well (and salad dressings) as both are a way of snazzing up something that could be boring with VERY little effort. Yesterday's chicken one this end was: garlic, ginger, honey, olive oil, soy sauce, red onion, yellow pepper and paprika (not sure whether this last one added anything though). Got thumbs up from me AND the man!
