Cocktail Hour: Iced Cinnamon Coffee

INDIAN SUMMER!!!

In honour of the glorious weather this weekend I've been busy mixing up big jugs of cinnamon iced coffee - it's refreshing, tasty and just alcoholic enough to make you giggle. A totally perfect hot weather drink.

You'll need (makes about 2 litres):
  • 2 tablespoons of instant coffee
  • Vanilla ice cream
  • Cinnamon powder
  • 1.5 litres cold milk
  • 80ml hot water
  • 2 tablespoons of sugar
  • 240ml Tia Maria
Mix it!
  • Blend the coffee, sugar and hot water until dissolved.
  • Into the blender add the milk, ice cream, Tia Maria and a decent sprinkling of cinnamon (to taste) - blend until smooth
  • Pour over ice and enjoy!
