You'll need:
- 225g plain flour
- 55g soft butter
- 25g grated mature cheddar
- pinch salt
- 150ml milk
- 2 tablespoons of baking powder
- salt and pepper
- big pinch of mixed herbs
Make it!
- Preheat your oven to 200 degrees C. You can daydream about that sexy guy you see on the way to work as you do this, if you like.
- Sift the salt, baking powder and flour into a bowl. Add the salt, pepper and mixed herbs.
- Blend in the butter with your fingertips.
- Add the milk and cheese and blend until you have a soft dough.
- Lightly flour a flat surface and roll out the dough until it's about half an inch thick.
- Cut out your scones and place onto a baking tray covered in baking parchment. Brush with a little milk and sprinkle some cheese over the top.
- Cook for 20 minutes, or until risen and golden brown on top (these scones won't rise as much as regular scones because of the cheese, but they should rise a fair bit).
