Baking for Beginners: Choc Chip and Sea Salt Cookies

Sea salt is very popular these days especially when paired with sweetness such as chocolate. So jumping on the bandwagon I decided to knock up these cookies the other evening. The sea salt nicely cuts through the sweetness of the cookie, just be careful with how much salt you add.

This mixture yields around 25-30 cookies so you might have to bake them in batches. From start to finish, including 3 rounds in the oven, it took me half an hour.

Chocolate Chip and Sea Salt Cookies (makes 20-30)
You will need:
  • 150g Plain Flour
  • ½ tsp  Bicarbonate of Soda
  • 120g Butter, softened
  • 150g Caster Sugar
  • 150g Light Brown Sugar
  • 1 large Egg
  • ¼ tsp Fine Salt
  • ¼ tsp Coarse Sea Salt
  • 1 ½ tsp Vanilla Essence
  • 160g Chocolate Chips
Make it!
  • Preheat oven to 180C, grease or line a couple of baking sheets
  • In a large bowl sift together the flour and bicarbonate of soda and set aside.
  • Take another mixing bowl and combine the butter and sugar well. I use my hands to really rub the butter and sugar together.
  • Into the butter mixture add the egg, salt and vanilla and beat well. Then gently stir in the flour until you have a smooth mixture. Finally add the chocolate chips and mix.
  • Use a small teaspoon to drop the cookie dough onto the baking sheets. These cookies spread a lot, so make sure there is a few inches in between each one.
  • Bake in the oven for 8 minutes or until just golden. Allow to cool in the tray for a few minutes before transferring to a wire rack to cool.
