Sluttishly Savoury: Oh So Pretty Couscous

Make a giant bowl of this because not only does it make you all happy just looking at it's prettiness, but you feel SUPER healthy eating it and it tastes amazing to boot.

Couscous is kinda like corn flakes for me, I don't have it for ages then when I do I'm like: this is ACE, I'm going to eat this ALL the time. Then I go crazy on it for a week before leaving it for a while until I find a packet tucked away at the back of my cupboard and so the cycle continues. This is always the dish that makes me fall in love with it every time, it's just so fresh and easy to make.

 I usually have it with toasted pitta breads, houmous and salad leaves or pop it into a tupperware container to take with me to work. It keeps for several days in the fridge, is perfect for BBQs (hello Summer you're out there somewhere) and is really good with hot food - I like it with a spicy tagine and it would be brilliant with Sara's delicious Harira

You'll need:
  • 1 packet couscous
  • chicken or veg stock (powdered or cube is fine)
  • 1 clove garlic finely grated
  • 1 carrot, grated
  • 1 red onion, finely chopped
  • 4 spring onions, chopped
  • few sticks of celery plus leaves, finely chopped
  • chopped fresh herbs such as parsley, coriander, fennel, parsley, mint, chives etc.
Make it!
  1. Make your hot stock. The amount of this will obviously vary depending on what size packet of couscous you buy just follow the instructions for the couscous but use your stock instead of just plain water. Pour your stock over the couscous in a saucepan or big bowl, add your grated garlic then cover with a tight fitting lid/tin foil and leave for about 15 minutes.
  2. Chop all your veg and herbs. Once your couscous is ready simply stir in the other ingredients, season and tuck in!

  2. I'm a bit obsessed with couscous! This looks delish. Also good with chickpeas in for an extra kick of protein to get you through the working day, and V8 vegetable juice to turn it a lovely colour if you fancy some variation!
