Let Her Eat Cake: Emergency Jaffa Cake

 
Sometimes a girl just needs a cake, and there is no cake to be found. Enter the mug cake. It's a selfish little cake for one. It's baked in a mug (obviously). I find it's the perfect cure for writer's block.

This cake is not exactly dinner party material, but it's chocolatey, fudgey and incredibly quick to knock up from a few store cupboard ingredients. Don't overcook it, it'll go rubbery. It's best slightly under-done, and as there are no eggs involved, you can safely eat it even if it's a little bit gooey in the middle (yum!).

Emergency Jaffa Cake (serves 1)
You'll need:

  • 4tbsp self-raising flour
  • 5tbsp caster sugar
  • 2tbsp cocoa powder
  • 3tbsp milk
  • 1/2tsp orange extract
  • 3tbsp sunflower oil
  • A slice of Terry's Chocolate Orange or 1tbsp shredless marmalade
Make it!
  • Mix together the flour, sugar and cocoa in a mug.
  • Stir in the milk, orange extract and oil until it forms a paste-like batter.
  • Stick the chocolate or marmalade in the middle of the batter.
  • Microwave for around 3 minutes in an 800w oven (if yours has a different rating, adjust accordingly).
  • Eat. Careful, it's hot!
