Sluttishly Savoury: Spicy Baked Chicken Wings

Chicken wings are one of my favourite things, the tasty little buggers. Alas, as much as I love them, I'm not really one for deep frying. Especially not now there's a curious kitten in the flat who appears to have no fear of the gas hob. When the Domestic Sluttery ladies came over for dinner earlier in the week, I decided to bake some instead of frying them. No mess, no tipsy oil burns, just succulent chicken and crispy skins without any of the faff. Throw in whatever herbs and spices and oils you fancy, these are pretty easy to do off the cuff. They were so tasty that Baxter The Wonder Kitten stole one for his supper and was banished to the hallway for the rest of the evening.

Spicy baked chicken wings (serves four as a side dish)
You'll need:
  • 12 chicken wings
  • 1 tablespoon seasame oil
  • 1 tablespoon olive oil
  • juice of half a lime
  • 1 teaspoon chilli seeds (I used Very Lazy Chilli, one of my favourite things in the entire world)
  • Cinnamon
  • Chilli powder
  • Cumin
  • Salt and pepper
Bake it!
  • Preheat the oven to 150 degrees/ gas mark 3
  • Trim the chicken wings if they need it.
  • Mix the wings in a baking tray with all of the other ingredients, making sure they're all properly coated in the mixture.
  • Ensure they're skin-side up and pop in the oven for about 40 minutes. When they come out they should be all golden and crispy.
