Sluttishly Vegetarian: Aloo Masala (Curried Potato)

Aloo Masala, or Curried Potato, looks like it should be a side dish but for some of you carb-loving Domestic Sluts out there this can be a meal or snack in it's own right. This delicious bowl of potato is spiced, warm and filling. It is perfect chilly-weather comfort food. And OK, it also makes a great side dish to your Indian dinner.

It is Diwali on Tuesday so the Boyf and I will be observing the vegetarian tradition of Hinduism. We will light candles, maybe some sparklers too and spend time with loved ones. I'm really looking forward to the food though.

Aloo Masala (Curried Potato) (serves 4)
You will need:
  • 1 tbsp vegetable oil
  • 2 large potatoes
  • 1 red onion
  • 1 tsp mustard seeds
  • ½ tsp turmeric
  • ½ tsp salt
  • 1 tsp tomato puree
  • 2 green chillis
  • 100ml cold water
Make it!
  1. Heat the oil in a heavy-bottom saucepan then tip in the mustard seeds. When they start to pop add the onion, chillis, turmeric and salt. Fry for a couple of minutes on a medium heat. 
  2. Pop the potatoes into the pan. Gently combine with the masala mixture. Heat through for a couple of minutes.
  3. Add the tomato puree and water, cover and simmer for 10 minutes or until the potato is cooked through.
  4. Optional: Garnish with fresh coriander and an extra sprinkle of salt.
