Sluttishly Easy: Cocktail Glass Berry Cheesecake

If you’re anything like me, you’ll have a fetish for buying items such as cocktail glasses. (Nothing wrong with that, although it seems a bit of a shame to have such a vast collection if you only use them for slurping 2-for-£5 red wine from the corner shop whilst watching re-runs of America’s Next Top Model.) If your champagne flutes and martini glasses are as sorely underused as mine, then this dessert is the perfect solution to show off your fancy glassware next time you have company.

All you need is:

150g berries (raspberries/blackberries/strawberries, fresh or frozen)
125g tub mascarpone or ricotta
4 bashed-up ginger biscuits
1 tbsp caster sugar
1 tbsp butter
2 tbsp icing sugar
lemon juice

Method:

Chuck the blackberries, caster sugar and 1tbsp lemon juice into a pan and heat gently for 3-4 minutes, until the berries start to disintegrate.

Whilst this berry-licious mixture is bubbling away, melt the butter in a mug in the microwave and mix in your broken biscuits. Spoon this into two cocktail glasses. Stir the icing sugar and another squirt of lemon juice into the mascarpone/ricotta. Split this between the glasses and pour the berries over the top.

Voila, near-instant creamy, fruity indulgence!
