You'll need these things:
- 225g self-raising flour
- 100g butter
- 75g caster sugar
- 2 bananas all mashed up
- 2 eggs
- 2tbsp honey or maple syrup
- Grease a loaf tin and preheat the over to 160 degrees/ gas mark 3.
- Sieve the flour into a mixing bowl and rub the butter and flour together until you get a mix that resembles breadcrumbs.
- Beat the eggs.
- Stir in the eggs, sugar, bananas and honey into the flour mixture and mix together.
- Spoon the mixture into the oaf tin and bake for about an hour.
- A skewer should come out dry, but with a few crumbs stuck on it. That's when you know it's ready.
- Leave to cool in the tin and then transfer to a wire rack.
- Cut into thick slices and serve.

ReplyDeleteFor the very first time in my 34 years on this earth, I baked yesterday! And I thank you Domestic Sluttery for giving me this recipe to do so. I could not have asked for a more splendidly easy and tasty recipe to try for the first time. I followed the recipe to a T (it was first time after all) and it was divine. It has made enough for my boyfriend and I to have had a big slice each for pudding last night (with a drizzle of single cream), each have a big slice for morning tea today, and still have half the loaf left.

DeleteI made this at the weekend and replaced 25g of flour with cocoa powder. It only needed about 40-45 mins - thankfully I started to smell it getting to that done stage so it didn't burn! Husband and work colleagues all enjoyed it - thank you!
