These are quite the crowd pleaser, and a bit of a party staple of mine. They're a little bit spicy, a little bit salty, and a little bit more healthy than standard chips. Of course, I go and ruin all that by dunking them in sour cream, but you can't have everything!
Spiced Sweet Potato Chips (serves 4-6, depending on greed levels)
You'll need:
- 1kg sweet potato
- 1 tbsp coriander seeds
- 1 tbsp fennel seeds
- 1 tbsp sea salt
- 2 tbsp olive oil
Make it!
- Preheat the oven to 200c / Gas Mark 6
- Peel the sweet potatoes and cut into chunky chips
- Bash the coriander and fennel seeds in a pestle and mortar
- Toss the sweet potato chips with the salt, spices and oil
- Bake for 20 minutes, or until cooked through
