Souper Dooper: Thai Chicken Soup

If, like me, you have been feeling a wee bit under the weather lately this super simple soup is just what you need to give you a boost.

It is jam packed full of wonderful thai flavours with a wonderful kick of chilli, just what you need to get those endorphins working.

What's more you can whip this soup up in around 10 minutes, which is just perfect when all you really want to do is curl up on the sofa.

Thai Chicken Soup (serves 3-4)

You will need:

  • 750ml coconut milk
  • 300g chicken breast, cut into strips
  • 2 teaspoons lemongrass, shredded
  • 3 spring onions, thinly sliced
  • 4 red chillies, deseeded and sliced
  • 3 teaspoons lime juice
  • 1 teaspoon fish sauce
  • Fresh coriander to taste
  • Salt & pepper to taste
Make it!

1. Place the coconut milk in a pan and heat to a simmer. Add the lemongrass and chicken. Poach the chicken for approximately 5 minutes until cooked through.

2. Add the spring onion and chilli and continue to cook for another 2 minutes.

3. Remove for the heat and stir in the lime juice, fish sauce and coriander.

4. Season with salt and pepper to taste.
