Sluttishly Savoury: Sticky Ribs


If you had to eat just one meal and one meal only for the rest of your life, what would it be? I ask myself this all the time and never really come up with a definitive answer. If I could have a meal that somehow involved good crusty bread, wine, Doritos, houmous, truffle pasta and sushi then I would be a very happy lady indeed.. oh and cheese, LOTS of cheese. My fella on the other hand knows exactly what it would be: ribs, mountains and mountains of ribs...forever...and a few beers.

One of best things about ribs is they are really cheap, you can pick up a couple of racks for about £3 so that means you can buy loads and totally meat out! They're also brilliant BBQ'd or roasted so regardless of what the weather does this weekend you can be assured of excellent sticky meaty ribby goodness!

You'll need:
  • rack of ribs
  • 3 star anise
  • 1 cinnamon stick
  • 3 bay leaves
  • few peppercorns
  • 2 tablespoons sugar
  • 3 teaspoons salt
  • 2 tablespoons treacle
  • 1 tablespoon tomato puree (or 2 tablespoons of ketchup)
  • 1 teaspoon garlic puree or powder
  • 1 teaspoon crushed ginger
Make it!
  1. Put your rack of ribs in a pot of cold water with the star anise, cinnamon, bay, peppercorns, salt and sugar. Make sure the ribs are submerged. Simmer until just cooked through then remove and pat dry.
  2. Mix your treacle, tomato puree, garlic powder and crushed ginger then coat your ribs and leave to marinade for 2 hours so they absorb all the lovely sticky goodness.
  3. Either BBQ them or put them in a roasting tray, cover with any excess marinade and roast on high for about 20 minutes or until they are lovely and caramelised.
