So, continuing with the theme of revering the almighty apple as part of Bramley Apple Week, I've busy baking up a storm, including these easy, cheesy apple scones.
Whilst that combination might sound whack, apple and cheese actually go together well, because the creamy cheese texture complements the sharp sweetness of the apples.
Don't believe me? Try using them together in salads, or adding a couple of tablespoonfuls of cream cheese to the pastry crust mixture of apple pie. Or just make these scones and have a cheesy apple-tastic feast:

You'll need:
2 cored and grated bramley apples
50g grated cheddar
150ml milk
50g margarine
200g self-raising flour, sieved into a large mixing bowl
What you'll need to do is:
1.Pre-heat your oven to 220C.
2.Rub the margarine into the flour until you've got a mixture which looks like breadcrumbs.
3.Mix in the grated apples and cheese, then gradually add the milk until you've got a soft, smooth dough.
4.Roll out on a floured surface, cut out your scones, place on a greased baking tray and bake for 10 minutes. Let them cool and then tuck in.

ReplyDeleteScones are like my baking nemesis. Any idea why mine NEVER rise like in the pictures?!! I've even bought an oven thermomenter (discovered my oven wasn't hot enough, and ajusted accordingly) and still no lovely risen scones - just sort of flat, denser (not altogether unpleasantly so) ones. Where am I going wrong?!

Wow, Nicola - they sound pretty good to me! Do you use cream cheese or just the normal stuff? I love anything with lemon curd so might have to give 'em a go!
ReplyDeleteHelen, I'm not sure where you're going wrong, maybe try experimenting with different self-raising flours? Weirdly, I find the cheaper ones can often be better than the fancier brands...
@Jane - just normal, good old-fashioned cheddar cheese. It may sound odd, but it tastes great with lemon curd. Also works with jam... :-)
ReplyDeleteAh yes, I am a great enthusiast for jam and cheese sandwiches but had never thought of branching out to lemon curd. I'll be giving it a whirl after my next trip to the supermarket, will let you know how I get on!
