These pancakes are so quick and easy that every day can be pancake day! And they have fruit it, which surely must count as one of your five a day, doesn't it?
Well if not you can join me down at the gym every day after I have spent a week chowing down the culinary delights on offer in Las Vegas. Mmmm, buffets!! Its probably just as well, for the sake of my lovely dress that we are getting married at the beginning of our trip when I will still fit in it!
Blueberry Pancakes (adapted from a Jamie Oliver recipe)
You will need:
- 135g Self Raising Flour
- 130ml Milk
- 1 egg
- Pinch of Salt
- Punnet of blueberries
- Knob of Butter
- Maple Syrup
Make it!
1. Place the flour, milk, egg and salt in a bowl and whisk until smooth.
2. Add your blueberries, adding as few or as many as you like, and stir them through the batter with a spoon.
3. Place the knob of butter in your frying pan and heat until melted.
4. Add a spoonful or two of batter for each pancake and cook until golden brown on the bottom. Then flip over and cook until the other side is also golden brown.
5. Stack them high on a plate and pour over some maple syrup and sprinkle with any spare blueberries. Grab yourself a big ol' cup of Joe and enjoy!

I've just made these and they were GORGEOUS! The blueberries went all squish and jammy, really lovely although I did put some sugar in the batter, because my blueberries were a little on the tart side. Great recipe I'll use again and again
