If you don't have a slow cooker, a casserole dish in the oven will do the same. But you really should get one. You'll bring it out every winter and it'll be one of the best things you ever invest in, I promise. This recipe serves four, which means I have exciting leftovers for lunch.
You'll need:
- 1 kilo casserole beef
- 1 onion
- 1 tin chopped tomatoes
- 50ml beef stock
- 2tbls hot curry powder
- 1tbls cumin
- 1tsp cinnamon
- 2 green chillies
- 2 cloves of garlic
- a huge chunk of fresh ginger, finely chopped
- oil
- salt and pepper
Brown the meat in a pan with some oil, and the salt and pepper. Chopped up the rest of the ingredients, and fry up with the meat. When the meat is browned, transfer into the slow cooker, pouring over the tomatoes and stock. Stir well and cook on high for four hours or low for eight (about 130 degrees if you're cooking in the oven). If you need to thicken the sauce, just mix in some cornflour towards the end of cooking. Serve with rice. Or chips, if you're two genius Domestic Sluts.

ReplyDeletethis recipe is amazing!! although i did leave mine for longer than stated as we were all out enjoying the snow! it tasted so good after being wet and cold all day!
