Baked apples (serves 2)
You will need:
- 2 large baking apples, like Golden Delicious
- 30g soft brown sugar
- 30g chopped nuts
- 30g raisins
- 1 tsp cinnamon
- 2 tsp butter
- Preheat the oven to 180C/350F/Gas Mark 4.
- Core the apples, leaving about 1cm at the bottom. If you don't have a corer, use a short serrated knife to cut out the stem and then dig out the core. Make sure you've scooped out all the seeds.
- Mix the sugar, nuts, raisins and cinnamon in a bowl. Pack half of it into each apple. Top with the butter.
- Put the stuffed apples into an ovenproof dish and add some water around them.
- Bake for 30-40 minutes until soft but not collapsing - you want them soft but not baby food.
- Serve with a drizzle of maple syrup, and/or a dollop of cream.
