Sluttishly Sweet: Million Leaves Cake

My kids have been little angels recently. My eldest won a trophy in her latest dance competition and my youngest has been producing some great art in her after school class (she's likely to put Banksy to shame with her latest interpretation of Street Art).

In celebration I decided to treat them to an old favourite. As a kid my grandmother would often make these as an after-school treat (before fat content and five-a-day were much of a consideration). Whilst they may not be the healthiest snack, they're quick, easy and totally delicious!

You'll need:
  • Pre-rolled puff pastry
  • Double cream
  • Strawberry jam
  • Egg white
Make it!
  • Pre-heat your oven to 180 degrees C. You can try and decide if Tom Cruise and Katie Holmes' marriage is a sham or not whilst you do this, if you like.
  • Cut the puff pastry into rectangles (around 3 inches wide, 6 long). You'll need one rectangle for each cake.
  • Prick each sheet of pastry thoroughly, brush with a little egg white and pop in the over for 20 minutes, or until risen, puffed-up and golden.
  • Meanwhile, whip your cream. I used an electric mixer but you can do it by hand if you feel the culinary need.
  • Once risen and golden, remove the puffs from the oven and pop onto a cooling rack.
  • once cooled, gently pull apart each rectangle, leaving you with one flat piece and one with a risen top.
  • Spread the jam over the bottom puff layer, and cream onto the top. Sandwich together and enjoy!

  1. Carrie, your suggestions of 'things to do whilst doing a quick culinary task' are fantastic! Personally, when folding in flour, I like to make important decisions such as what colour to paint my nails.

  2. Ah, shucks, thanks! I usually just write whatever it was that I was thinking whilst turning the oven on. Pre-heating is important, granted, but it isn't really very fun!
