Sluttishly Savoury: Beer & Bacon Nuts

Hurrah! Autumn telly scheduling is upon us. Whether you're salivating during GBBO, pondering why you haven't made a million as you watch Dragons' Den, or OMGing all through the final episodes of Breaking Bad, one thing's for sure - comfy sofa + your favourite shows = the need for tasty TV snacks aplenty.

May I suggest these delicious, beer-glazed nuts, shot through with crispy, salty shards of pancetta? They're quick and easy to make, and fiendishly moreish.

Move over Pringles... snacking just got serious.

Beer & Bacon Nuts (makes a lot)
You will need:
  • 180g cubed pancetta 
  • 250ml beer
  • 160g soft brown sugar
  • 400g mixed nuts
  • Black pepper and sea salt to taste
Make it!
  1. Preheat the oven to 180°C/350°F/Gas Mark 4, and line a baking sheet with foil.
  2. Fry the pancetta in a dry pan until crispy, then add in the beer and sugar. Simmer for 10 minutes until it's reduced to a gloopy glaze.
  3. Throw in the nuts and stir well so that they're all coated in beery, bacony goodness. 
  4. Spread evenly across the baking sheet and place in the centre of the oven for 20 minutes. 
  5. Leave to cool before breaking up any chunky bits and sprinkling with salt. Store in an airtight container or, y'know, scoff the lot immediately.

    1. I'd say 3-4 days, because of the bacon. You do end up with tons (that smallish Kilner jar in the pic, plus about half of that again), but the recipe works just as well in half quantities if you want to be sure of getting through them all in that time! :)

    1. I used real ale, Jen, but I reckon lager would work well - just be aware of the fizz factor when adding it to the sizzling bacon! Let us know how you get on!

  4. 3-4 days, Veronica, so probably not ideal for a hamper, but perhaps good as a gift when going to dinner or suchlike at a friend's house?
