Mocktail Hour: Hedgerow Collins

Having seen my quest to discover interesting mocktail recipes, which started with this rather tasty Blueberry Lemonade, I was contacted by the lovely folk at Innocent who were keen to help me along my way by sharing their mocktail recipes, which use their new range of pure fruit juices.

This recipe provides you with a nice big pitcher full of non-alcholic yumminess, which is bound to bring a smile to the face of any of your teetotal friends when they attend you summer barbecues. Trust me, they will love you that extra bit more for making the effort.

I'm sure it would also taste quite lovely with a slug of vodka or topped up with a drop of sparkling wine too for all of those who prefer your drinks with a bit more of a kick.

Hedgerow Collins
(Makes about 1 litre)

You will need:
  • 900ml pure apple juice
  • 100g fresh blackberries
  • Elderflower cordial (why not make your own)

Shake it!

1. Wash your blackberries and then give them a blitz in the blender. If you don't have a blender then mash them to a pulp in a bowl using the back of a spoon.

2. Grab yourself a nice big jug, throw in some ice and add the apple juice.

3. Add the smushed up blackberries and a nice big slug of elderflower cordial, to taste.

4. Give the whole thing a good ol' stir and serve in tall glasses.
