I should warn you that this sauce is seriously addictive, in fact it is the crack cocaine of sauces that will have you sneaking spoonfuls from the jar at all hours of the day and night.
It's amazing drizzled it over blueberry pancakes, or try it with a scoop of vanilla ice cream in a filled yorkie or another favourite of mine is to use it to make some kick ass cocktails. Make LOTS though as you will find yourself simply eating it straight out of the jar in your pyjamas at 3am.
You'll need:
- 120g soft light brown sugar
- 100g unsalted butter
- 1 tblsp water
- 250ml double cream
- 1 tsp sea salt flakes
- Put the butter, sugar and water into a saucepan and heat gently. Don't stir it though just swirl the saucepan to mix.
- Once it's melted turn up the heat slightly and let it bubble away for 3 minutes before whisking in the double cream. Remove from the heat and add your sea salt flakes, taste and see if you want more salt (it may be hot so be careful, a burnt tongue is really painful!). You can use the sauce straight away but if you chill it in the fridge it will thicken up nicely. This will happily keep in the fridge for up to 2 weeks but I doubt you will be able to resist eating it before then!
I just keep staring at this and feeling really, really SMILEY.
ReplyDeleteI love everything about that photo, especially the cat lurking in the background.
ReplyDeleteTHERE IS A CAT!!! I totally missed it. Now I'm double-smiley.
DeleteThat's BorisCat, he totally gatecrashed my shot when he thought he was stealthily sneaking up on the whipped cream dessert!
ReplyDeleteIs it wrong to try this with my creme egg cupcakes?
ReplyDeleteWhat about with a baked apple, cored, in the oven with water, yummy! And grilled pineapple... Right, must prepare double dose.
I've even put in on toast for breakfast, so naughty but so nice!
ReplyDeleteJust made this to have with icecream - it is absolutely bloody GORGEOUS. I kind of want to get into the saucepan and bathe in it!
ReplyDeleteIt's ridiculously addictive isn't it? It never fails to cheer even the most rubbish of days with one big spoonful!
DeleteJust made this and is quite runny, does it thicken up a bit as it cools/chills? Maybe used too much cream? Tastes devine though and was very easy to do! :-)
ReplyDeleteI made this today and its chilling in the fridge. It tastes amazing, thanks for the recipe. Amanda
ReplyDeleteCan you put the measurements in English please. I don't know grams.
ReplyDeleteHi Anon,
DeleteGrams are English, they've been in use since 1965! But we do have a conversion chart, should you wish to use that:
