Mum's Recipe: Chicken Curry

I recently hopped on a train (read: was dragged to the station kicking and screaming) to visit my family and friends who live outside of London. Though I'm bored out of my mind, the bonus is that I get to eat my mum's awesome cooking.

Yesterday on Domestic Sluttery we were discussing the dishes our parents cook that makes going home worthwhile. For me, it's chicken curry. I picked my mum's brain for the recipe and it turns out that it's really, really easy to make.

Like every family recipe, my mum's chicken curry has a secret ingredient: Mr. Brown's Jamaican Style Curry Seasoning (you can find it in Tesco's, too). Not only is it delightfully named, but it makes the curry extra-yum and ridiculously simple to prepare. Which is all you could want from a secret ingredient, really.

My Mum's Chicken Curry

Serves 4

You'll need these things:

3 chicken breasts, diced
3-4 tbsp of Mr. Brown's Curry powder
One cup of coconut milk
1 tbsp of cooking oil (any to hand)

And you'll have to cook them like this:

1) Fry the curry powder in a large pan over the heated oil for two minutes
2) Add the diced chicken and stir until coated in the oil and curry powder
3) Add the coconut milk and allow to simmer for 20 minutes on a low heat
4) That's it! Serve with basmati rice or eat with a spoon out of the pan. It's entirely up to you.
