Sometimes I like to just stand in front of the cupboards in my kitchen staring at ingredients and trying to conjure up combinations that are marginally tastier than the blue aniseed shreddies I made my little brother eat when we were kids. Food experimentation should not involve young children running to the bathroom. Thankfully I only share the successful results on Domestic Sluttery, and one such dish was this incredibly tasty dessert - Honey and Coconut Pineapple.
This dessert is heading in the direction of a fritter as we are looking at frying the pineapple in honey. But the addition of cinnamon and a toss about in coconut takes the dish away from deep-fried and on to warm, soft, sticky pud.
Honey and Coconut Pineapple
You will need:
- Pineapple, sliced 1.5cm thick
- 1tbsp Honey
- 2tbsp Desiccated Coconut
- 1/4 tsp Ground Cinnamon
Make it!
- add the honey to a small frying pan on a medium heat.
- when just starts to bubble pop the slice of pineapple in and pan fry, flipping every 30 seconds until most of the honey has reduced. if you like baste the pineapple using a teaspoon. for the final 1-2 minutes whack up the heat to high to seal with pineapple slightly.
- remove pineapple to a plate of dessicated coconut. coat both sides of the pineapple. sprinkle a touch of ground cinnamon.
- move to a clean plate and serve whilst warm.
mmmm, this reminds me of a similar dessert my mum used to do - frying pineapple in butter with cinnamon. Plus the pineapple counts as one of your five a day...
