Here's a simple one for an easy weekday supper, or to pack in a picnic and take to the park. The mango is an unexpected and delicious addition.
Tortilla wraps are one of those standby bases for thousands of combinations. They work well with hot or cold fillings, and if yours come out of the packet a bit dry and cracking, just pop them in a dry frying pan for a minute or so to warm and soften them.
Avocados are in season right now until October, so take advantage of them and try this recipe on for size.
You'll need:
- 1 avocado, sliced
- 2 tbsp mayonnaise
- 1 tsp dried chilli flakes
- 1 lemon
- 2 tortilla wraps
- 1 skinless cooked chicken breast
- 1 small mango. sliced
- 1 handful baby spinach
Make it!
- Stir the chilli into the mayo, and spread it on one side of your tortillas
- Drizzle the avocado with lemon juice and add it to the tortillas
- Add some sliced roast chicken, ripe mango slices and spinach leaves.
- Roll and enjoy!
