Sluttishly Savoury: Smoked Salmon Benedict

Saturday mornings round mine are usually kicked off with a lazy brunch as it's quite often the only day I get a lie-in.  I like to make the very most of this and therefore want a simple but deliciously decadent way to celebrate the arrival of the weekend.
You could of course make your own hollandaise sauce but I never bother as I would much rather spend that time in bed reading the paper watching saturday morning TV.
I love this breakfast so much that it is our staple birthday/Christmas morning/New Year's morning meal and therefore goes down even better with a nice glass of chilled Bucks Fizz!

You'll need:
  • English muffins
  • butter
  • smoked salmon
  • eggs
  • pre made Hollandaise sauce
  • rocket
  • pepper
  • snipped chives
Make it!
  1. Poach your eggs and heat your hollandaise.
  2. Slice your muffins in half, toast then butter. Put a bit of rocket on each one then arrange a few slices of smoked salmon on top and add a few grinds of pepper.
  3. Place a poached egg on top of your salmon, cover with hollandaise sauce, sprinkle with a few chives and tuck in!

  1. Hazel takes amazing food photos. I want this now. Eggs benedict and variations thereon is my favourite food (and Maille hollondaise is quite good and easier than making your own - good shout on that!)

    1. Its amazing with smoked bacon too or just a few gratings of parmesan and a drizzle of truffle oil is also pretty awesome!
