Out of all of the cocktails I try for um, 'research purposes', the sours are my favourites. Pisco sour is probably at the top of the list, but anything with amaretto in is usually a close second. Not only are they super tasty, they're really really easy to make. You can get recipes that are just amaretto and sugar syrup, but if you're going to make a cocktail, you really should use the right stuff. Besides, a bottle of bitters is one of the most useful things you'll buy.
You'll need:- 50ml Amaretto
- 75ml lemon juice
- dash of bitters
- lemon rind
- 12ml egg white
- 1/2 teaspoon brown sugar
Shake it!Muddle the bitters and sugar onto the lemon rind in an old fashioned glass. Add ice. Shake the amaretto with the lemon juice and eggs whites and strain into the glass. You should get a lovely egg white foam on the top, although that takes a bit of practise. Which means you might need more than one.
