This is a really simple recipe, with no egg yolks needed (I didn't have any eggs). Ice cream either has an egg yolk base, or a custard base and I went down the custard route which means simmering your ingredients on the hob before freezing. Still, it doesn't take very long at all. And it's delicious.
You'll need:
- 150g chocolate. I used Green & Black's butterscotch.
- 200ml full fat milk
- 200ml cream
- 130g sugar
- Melt the chocolate on the hob with a little milk. Make sure it's smooth and keep stirring so you don't burn it to the bottom of the pan.
- Once it's melted, add the rest of your milk gradually until it's all mixed in with the chocolate.
- Take it off the heat and add the cream and sugar mixing well. Leave it in the fridge to cool completely otherwise you'll have your work cut out for you when it comes to freezing.
- Either transfer the mixture to your ice cream maker and use as normal.
- If you don't have an ice cream maker transfer the mix to the freezer and leave for an hour. Beat every half an hour for two hours to stop ice crystals forming (you're eating as you go along, aren't you?) Stop the beating when it gets difficult and leave for another half an hour.
- Add hundreds and thousands because they're fun and eat! Be very impressed with yourself for not just going down the corner shop and buying a Feast.
