Sluttishly Savoury: Easy Peasy Chilli Pea Prawns

I have to confess, this is one of those dishes that came into being because I just happened to have prawns, sugarsnap peas and sweet chilli sauce lying around the kitchen and I was too lazy to go to the shops. What I ended up with was a super easy, quick dish that's actually quite tasty (trust me, my kitchen experiments don't always end up this way!).

The green and pink look so pretty together. And did I mention it's easy?

You could use bought sweet chilli sauce, or go the whole hog and make your own.

Easy Peasy Chilli Pea Prawns (serves 2)

You’ll need:
  • 210g cooked prawns
  • 225g sugarsnap peas, topped, tailed and stringy bits removed
  • 3tbsp sweet chilli sauce
Make it!
  • Bring some salted water to the boil.
  • Simmer the sugarsnaps for 4 minutes.
  • In a separate pan, heat the chilli sauce through.
  • Add the prawns to the sugarsnap water for 1 minute, just enough to heat through.
  • Drain the prawns and sugarsnaps, and toss with the hot chilli sauce.
  • Serve with noodles or sticky rice.
