Sluttishly Easy: Baked Apples

Fruit: not a pudding. Baked fruit: why yes I WOULD like seconds thank you very much. Barbecued bananas with melted chocolate, baked peaches with honey, fruit crumble - all simple yet awesome ways to finish a meal. Simplest of all are baked apples, which take minutes to make. Stick them in the oven while you're eating your tea and enjoy a beautifully scented warm dessert before doing the washing-up.

Baked apples (serves 2)

You will need:
  • 2 large baking apples, like Golden Delicious
  • 30g soft brown sugar
  • 30g chopped nuts
  • 30g raisins
  • 1 tsp cinnamon
  • 2 tsp butter
Make it!
  1. Preheat the oven to 180C/350F/Gas Mark 4.
  2. Core the apples, leaving about 1cm at the bottom. If you don't have a corer, use a short serrated knife to cut out the stem and then dig out the core. Make sure you've scooped out all the seeds.
  3. Mix the sugar, nuts, raisins and cinnamon in a bowl. Pack half of it into each apple. Top with the butter.
  4. Put the stuffed apples into an ovenproof dish and add some water around them.
  5. Bake for 30-40 minutes until soft but not collapsing - you want them soft but not baby food.
  6. Serve with a drizzle of maple syrup, and/or a dollop of cream.

  4. (Also, I've just noticed from the photo how obvious it is I don't own a corer. I just hacked about with a knife and it was fine.)

  5. Thank you for this recipe.

My 4 year old who normally declares everything yuck, yucky or very yucky declared this to be 'Licious'
