Reader Recipe: Grapefruit Sherbert

A little while ago, we asked you for your recipes and photos, and our goodie bag winner Pamela Guyatt sent us this lovely concoction which she says is her "favourite, foolproof, delectable and instant pudding..."

You'll need these things:
  • 1 large tin grapefruit segments
  • 1/2 pt double cream
  • 3 or 4 oz. caster sugar
  • squeeze of lemon
You'll need to do these things:
  • Turn the grapefruit segments with juice into a large bowl. Chop the grapefruit segments if they're large.
  • Pour in the double cream and mix.
  • Stir in sugar and a squeeze of lemon.
  • Chill until required.
Serve with little almond biscuits. Even people who don't like grapefruit adore this, and it takes, ooh, all of five minutes to make! And it can also be made with raspberries if you prefer.
