Things you will need for the cake:
- 125 grams self raising flour
- 100ml sunflower oil
- Pinch of salt
- 1 tsp ground cinnamon
- 125 grams soft brown sugar
- 2 eggs
- 125 grams grated carrot
- 25 grams desiccated coconut
- 25 g chopped walnuts
- 50 grams butter
- 50 grams mascarpone
- 225 grams icing sugar
- 1 tsp lemon juice
- Grease a baking tin and preheat the oven to 180 degress/ gas mark 4.
- Mix the flour, cinnamon, salt and sugar together. Then add the eggs and oil and mix everything up. Throw in the other stuff too - carrots, coconut and walnuts.
- There. You've made a cake! Pop it in the oven for 20-25 minutes.
- Mix together the icing sugar, cream cheese and lemon juice until it's light and creamy.
- Take the cake out of the oven and leave it to cool (otherwise your frosting will melt!)
- Spread the cake with the frosting, decorate with walnuts and then show off to everyone about how hard you've worked.
- Eat it all!
