
You'll need:
(Makes 10-12)
125g plain flour
15g sugar
1 egg
2 ripe bananas
30ml vegetable oil
235ml milk
1tsp baking powder
1tsp vanilla flavouring
Pinch salt
What you'll need to do is:
1. Sieve your flour into a bowl. Add your sugar, baking powder and salt. In a separate bowl, squish your bananas to a pulp with a fork, then mix in the vanilla, milk, oil and egg.
2. Stir the flour mixture into the banana mixture. The batter will probably look a bit lumpy; this is normal, so don't stress!
3. Heat oil in a frying pan until hot, and add enough batter to coat the bottom of the pan. Cook until bubbles start to form and then flip and cook again until golden brown on both sides. Repeat until the batter's all gone and you've got an entire stack. Get creative with your toppings, then tuck in!
Making these unfortunately turned out to be a bit of a disaster, ending with one giant, omelette-sized, completely unflippable pancake. I don't think I was using the right kind of pan, nor was it hot enough. However, I'm going to chalk this up to being mostly incapable in the kitchen, since my dad showed up and was making perfectly formed, flippable pancakes in seconds. Sluttishly easy - yes. Idiot proof - no.
