Sluttishly Easy: Chocolate Courgette Cake

I’m currently staying on a farm in Wales, where strangely enough, we have an abundance of courgettes. My host Fran is nothing if not crafty when it comes to using surplus veggies, and she’s graciously parted with her go-to recipe for the most delicious chocolate courgette cake.

Don’t be put off by the title. This is primarily a chocolate cake, and you can’t even taste the courgettes. All they add is an incredible amount of moistness. The only time I like using the word moist is when I’m talking about cake, and this cake is so moist that I am going to say it again. Moist.

There are a lot of eggs, and plenty of sugar and butter, but I’m pretty sure my doctor said that the courgettes cancel that out. Minor insignificant detail, as they say.

You Will Need:
  • 2 courgettes
  • 4 eggs
  • 250g melted butter
  • 250g self raising flour
  • 130g sugar
  • As much cocoa as you want (I went for 125g!)
Make it!
  • Preheat your oven to 180 degrees, then grease and line a loaf tin
  • Sift the flour, sugar and cocoa into a mixing bowl
  • Stir in the butter and crack the eggs in
  • Grate in the courgettes
  • Pour into the loaf tin and bake for approximately 30 minutes or until a skewer comes out clean
  • Cool slightly before serving
Some Hot Tips:
  1. This is a really dense and moist (did I mention that?) cake, so be generous with the chocolateyness.
  2. Throw in some chocolate chips or even some berries for extra nom factor.
  3. When the cake is cooling, take a good long sniff - I guarantee it will make your day better!

  1. Might have to give this a go - I had a chocolate aubergine cake the other day; again you couldn't taste the veg but it just gave it that lovely auberginey squidgyness..

  2. My kids ASK for chocolate courgette cake for their birthdays and school bake sales - I used to call it Mother's Revenge but they like it so much, there's not really any revenge in it anymore. They delight in telling their mates that they are eating vegetables!! We make a tray bake quantity and sprinkle chocolate chips on the top just as it gos in the oven. Yummy!!

    I love the idea of veg inside a cake...although, at my work a lady made carrot cake, but she ran out of carrots and decided to put in courgette and pineapple (?)

    Don’t ask me why she thought it was a good idea - it was the most disgusting thing I’ve ever eaten. So one can go too far with the old veg. Luckily this turns out just perfectly!

  4. I made it but may have overdone the courgette as i could taste it a bit - couldn't get through it all so sitting patiently in the freezer to whistle out for guests this weekend to see how they feel about it all!
