Sluttishly Vegan: Kissir

Party food can be a bit of a chore, and I'm always tempted just to break open a huge packet of crisps and leave everyone to it. My new thing though is to ditch the faffy canapes and make enormous platters of yummy stuff for everyone to serve themselves. This substantial salad involves a bit of chopping but it's dead easy to make ahead and keep in the fridge, so you can serve up a huge bowl for a crowd without tearing your hair out.

Kissir (sometimes spelt Kisir) is a Turkish dish of bulghur wheat, a bit like Tabouleh. There are many variations, some include cucumber or coriander, garlic or tomato paste, so go ahead and freestyle if you don't have all the ingredients. If it was summer, I'd use lovely fresh tomatoes, but as it isn't I think tinned ones are better than the watery winter ones you'll find in the supermarket. Pomegranate molasses is available from larger Sainsbury's and middle eastern shops, but you can substitute lemon juice if you can't get hold of any.

Kissir (serves 8)

You'll need:
  • 280g bulghur wheat
  • 2 tins chopped tomatoes, drained
  • 1 red pepper
  • 1 yellow pepper
  • 1 red onion
  • 6 spring onions
  • Good pinch of chilli flakes
  • 6tbsp extra virgin olive oil
  • 2tbsp pomegranate molasses
  • 2tsp paprika
  • 1tsp ground cumin
  • A bunch of parsley, leaves picked
  • A bunch of mint, leaves picked
Make it!
  • Bring 300ml water to the boil. Put the wheat into a bowl and cover with the water. Cover the bowl with a teatowel and leave for 15 minutes.
  • Meanwhile, core the peppers and chop them. Slice the red onion finely. Slice the spring onions finely. Chop the parsley and mint finely. You get the picture.
  • Break up the bulghur wheat with a fork, then stir through the spring onions, onions, tomatoes and peppers.
  • Stir through the olive oil, chillies, pomegranate molasses, paprika, cumin, some salt and pepper. Sprinkle over the parsley and mint.
