Sluttishly Easy: Posh beans on toast

This is my favourite midweek dinner. Not only is it delicious, inexpensive and pretty healthy, it's really quick to make. Granted, it's not as easy as making average beans on toast (there are a few more tins to open for starters) but it's several times yummier and won't make you feel like a student.

Posh beans on toast (serves 2)

You'll need:
  • Two 400g tins of chickpeas (or whatever white bean you fancy)
  • A 400g tin of chopped tomatoes
  • A red onion, chopped
  • A few cloves of garlic, crushed
  • A squizz of extra virgin olive oil (for drizzling)
  • Nice bread, like ciabatta
  • Fresh coriander or basil, chopped (mixed dried herbs will do at a pinch)
  • Salt and pepper to taste
Make it!
  • Fry the garlic and onion for a couple of minutes, or until it starts to smells amazing
  • Add the chopped tomatoes, beans, herbs, salt and pepper
  • Give it a stir and let simmer for ten minutes or so
  • Slice the ciabatta and pop it into the toaster
  • Realise that ciabatta doesn't quite fit into the toaster and put it under the grill instead
  • Drizzle the olive oil over the toasted ciabatta and serve with the cooked beans
  • Devour in front of the telly

  2. that sounds super yum.

    If you want to posh up regular baked beans I recommend you try cheese on top (no need to grill, just bung it on), and jalapenos and sour cream on the side, with nice toast. boyfriend had this in a posh deli/cafe recently for £5 (imagine my eyebrow raising), but it was brilliant and worth it for a good cheap/fast tea idea.

  4. This sounds FAB. I'd be tempted to throw some butter beans in with the chickpeas - they're my favourite.
