Sluttishly Easy: Boozy Chocolate Mousse

So when the weather forecast wizards at the Met Office promised us a glorious summer, we couldn’t help but be a teensy bit cynical. Whilst we Domestic Sluts love a cocktail or two in the garden when the sun’s shining, it’s not a feat often accomplished with British weather being such an unpredictable beast. But we’re not the pessimistic types, resigned to drizzle and keeping our cardigans on all summer. We’re keeping our fingers crossed. And if the weather does get warmer, we want to be prepared. Preferably with a chilled boozy dessert that you can whip up minutes, so you’ve more time to bask in the sunshine.

What you’ll need is:
150g dark chocolate
250ml double cream
250ml custard
Squirt of lemon juice
Vanilla flavouring
Delicious creamy booze to serve with
(Serves 4)

All you need to do is:
Break the chocolate up into bite-sized chunks, melt in a pan or microwaveable bowl, and then set aside to cool slightly. Whip your cream until it starts to peak, then fold in the custard, chocolate and other ingredients. Decant into suitably fancy containers (martini glasses and teacups work well), and chill in the fridge or half an hour or so until set. Add a splash of booze to serve, such as Baileys or my personal favourite, Dooleys toffee liqueur. If you'd rather stay sober, cream, wafers or a dusting of icing sugar also make snazzy finishing touches.

Heavenly on hot days, but just as delicious even if the weather’s rubbish.

    I nearly burnt down our home ec. department at school trying to make chocolate mousse. Haven't tried it since...
