Sluttery Christmas: Apple, Celery and Walnut Stuffing

Like many people, my favourite meal of all Christmas is Boxing Day leftovers. I will accept no variations: it's turkey (oh look, win one here!), chipolatas, a baked potato the size of Birmingham, and my mother's legendary stuffing.

My grandma got the recipe from The Telegraph about 40 years ago and it's been a firm favourite ever since. My mum sent me a curve ball the other week by serving this stuffing in November, which naturally prompted me to cook it myself for a veggie dinner party last night. I may never eat anything again.

I cannot say strongly enough how monumentally epic this stuffing is. If other stuffing had feelings, it would feel very inadequate right now.

Apple, Celery and Walnut stuffing (serves 6)

Mum's warning: "You must use proper bread and not plastic and cut the crusts off."

You will need:
  • 2 onions, sliced
  • 55g butter
  • 2 dessert apples, diced
  • 1 small head celery, roughly chopped
  • 225g fresh breadcrumbs
  • 115g chopped walnuts
  • ½ teaspoon mixed herbs
  • 1 tablespoon chopped parsley
  • seasoning
  • about 3 tablespoons single cream
Make it!
  1. Preheat your oven to 180 degrees.
  2. Lightly fry onions in butter. 
  3. Bind all ingredients together with cream, pour into a ceramic dish then cook for 30 minutes until crispy.

  1. Stuffing is great stuff. So tasty. I totally buy breadcrumbs in a packet, though. Your mum would tell me off.
