Sluttishly Simple: No-Bake Birthday Cake

It was my nephew's 1st birthday party last weekend. Little Gilbert had a robot-themed shindig at Walthamstow Social Club - a cute, retro venue in Walthamstow Village.

Everything was suitably adorned with crinkly tin foil and big red buttons, bright balloons and a make-your-own-robot booth. It was perfect. When my sister realised how make people wanted to wish Gilbertron (my nephew's robot name for the day) a happy birthday, she realised that one robot-themed cake wasn't going to cut the mustard.

No fear!

My mother rocked up on her white charger* and threw together a gorgeous two-tiered Rice Krispie marshmallow cake complete with blue ribbon. It looked gorgeous, and was super-simple to make - no oven needed!

(*for white charger read Nissan Micra)

You'll need:
  • Six level cups of Rice Krispies
  • Approx 10oz marshmallows (about one packet)
  • Approx 3 tablespoons of butter
*Note*: Don't worry about being too exact - if you ask me you can never have too much Rice Krispie cake mixture ...

Make it!
  • First, get your two cake tins ready - remember to adjust your amounts depending on tin size! Lightly grease the tins or line with baking paper to help you get the sticky cake out later!
  • Melt the butter and marshmallows in a pan until bubbling and completely melted.
  • Take the pan off the heat and slam in all the Rice Krispies. Mix with a wooden spoon - you'll have to be quick, this stuff sets quickly!
  • Once blended, plop the mixture into your two cake tins. Use a metal spoon dipped in hot water to help spread the mixture evenly.
  • Leave to set then remove from tins, assemble and add a pretty ribbon.
