I love a good soup. This particular soup has a nice strong flavour courtesy of the naughty addition of the processed peas. Of course, if you're adverse to a little bit of the mushy, then you can always substitute for 600g of frozen or fresh peas instead.
- 1 large onion
- 2 cloves of garlic
- 400g cooked ham
- 1 leek
- 3 carrots
- Tin of processed peas
- 1.5 litres of chicken stock
- 250ml white wine
- Large knob of butter
- Dried parsley
- Salt and pepper
Make it!
- Dice all the veg, onion and garlic and fry in a deep pan in the butter until soft.
- Cube the ham and add to the pan with a touch of salt and pepper.
- Add the white wine and flash, then add the chicken stock.
- Bring the whole lot to the boil then add a tin of processed peas (strained) and a pinch of dried parsley (or fresh if you have it!)
- Simmer the soup for 30 minutes and serve whilst it's piping hot.
