Sluttishly Savoury: Maple Syrup and Pepper Pork Ribs

I put a huge amount of faith in my evening meal sometimes. I'd had a pretty rubbish day yesterday and my dark mood was in danger of ruining my evening. So if I'm having a day of the grumps, I turn to my dinner and make something that's going to make me happy. Most of the time, it works. Except when I'm starving and have no idea what I want to eat.

Wondering around the supermarket, I stumbled across some pork ribs. Ribs are so tasty. Just enough meat and fat to be really indulgent, but they're not too much. They're pretty cheap too. But what to do with them? Well, I had some pepper, and a bottle of Dickinson Bros maple syrup (all the way from Canada no less!) that was a gift from a friend in the Dickinson family. So basically, I had everything I needed for a simple, tasty meal. This is the easiest recipe there is, and if you've had a bad day, sweet gooey ribs might just put a smile back on your face.

You'll need:
  • 3-4 pork ribs per person.
  • Pepper
  • Maple syrup
Make it!

Drizzle maple syrup over the ribs, squish about until they're completely covered. Add the pepper and rub into the meat (rather than the bone). Cook at Gas Mark 5/190 degrees for around 35 minutes. Turn halfway through, and add more maple syrup if needed. Just a drizzle is enough to make the sweetest, stickiest, bestest comfort food ever. I served mine with roasted veg, but a simple salad would work perfectly.

  2. They were yummy indeed! So yummy I made them again for lunch today! And I've still got lots of syrup left to make maple pecan pie :-)
