Sluttishly Vegetarian: Hangover Curry

I am quite the curry fan, as I'm sure you lovely readers have noticed. Sometimes though, they do seem like a huge faff to make. This is my go to curry-in-a-hurry, for when I'm feeling a bit tender and can't cope with anything complicated. It also wins points for being super speedy - you can whip it up in no time at all. If you find me eating this, you'll know that I had a pretty indulgent time the night before and I'm trying to compensate by eating lots of beans and greens. It's not quite a hangover remedy, but it's pretty close.

Hangover Curry (serves 2)
You'll need:
  • 1/2tsp mustard seeds
  • 1 clove garlic, chopped finely
  • 10 curry leaves (optional - my Asda sells them fresh, and I keep them in the freezer)
  • 1 onion, chopped finely
  • 2 green chillies, slit but not chopped
  • 1/2tsp chilli powder
  • 1tsp ground coriander
  • 1/2tsp ground turmeric
  • 1 bag spinach
  • 1 can black eye beans, drained
  • 200g yoghurt
Make it!
  • Heat some oil in a saucepan and cook the mustard seeds until they start to pop.
  • Add the garlic, curry leaves and onion. Cook for a few minutes until the onion is soft but not browned.
  • Add the chillies and spices. Stir for 30 seconds or so, then add 2tbsp water and the spinach. Cook for a few minutes until the spinach is wilted down.
  • Stir in the black eye beans and stir to warm through.
  • Take off the heat, stir through the yoghurt and season with salt to taste.
  • Tuck in. Vow never to drink again (until the next time).

  3. Haha, I read this, and then a few hours later I went grocery shopping. As I reached the store, I suddenly *really wanted* beans and chickpeas and spinach and wheatberry, so I got them all, and it wasn't until I was almost home again that I realized it was because of this recipe (the spinach and beans, at least)! And of course we've run out of ALL our spices, so I used a bouillon cube to give at least SOME flavour :), but I'll go shopping for spices some day soon... Just thought it was funny that this recipe really stuck with me like that :P
